An amazing guide to making home made pasta. While I have tried other recipe books in an attempt to make my own pasta at home, Aliza Green explains the pros and cons of various wheat flours, and the importance of proper hydration. Step by step instructions, along with generous photos, really make the process look easier than other pasta making books. She also includes a number of recipes for flavored pastas, such as spinach and asparagus, and also stuffed pasta and various gnocchis. Looking forward to trying out many of these recipes.

My thanks to New Shoe Press and to Netgalley for providing a copy of this fabulous cookbook.

The book is peppered with interesting facts, historical tidbits, and alternative methods. My only two criticisms are that some of the tidbits are overlaid with graphics, making them difficult to read, and the lack of photos of the recipes.… (més)
