This is the seventh edition, not the fourth edition that's available in facsimile and online; which is to say that it's lost most of the material about managing your Indian cook and gained a startling number of recipes for aspic. I'd recommend the earlier edition unless you have a very specific interest in Edwardian grand cuisine.

This is a reprint of the 1885 (5th) ed., which was published by Higginbotham of Madras. This ed has an intro by Leslie Forbes. The 1st ed came out in 1878. The sections I find most interesting are the short ones on curries (which were held in low esteem at the time—at least by the British) and the final section, which is on Indian kitchens. The former also included several recipes for mulligatunny [sic] and chutney.

The author is obviously deeply immersed in everything related to cookery. The bulk of the book consists of European recipes. There are also chapters on putting together menus (there are sample menus with recipes later in the book), managing one’s cook, and necessary items for the kitchen and the storeroom (he denounces “Worcester Sauce”).… (més)
