Another trip I am planning for the hopefully not too distant future, is a roundtrip in Andalucia, visiting cities such as Granada, Cordoba, Sevilla, Cadiz, Ronda and Malaga.
Some of these cities must have a literary existence, surely.
In my library I have Hemingway's For Whom the Bell Tolls, set in Ronda, but lamentably I have not read it yet.
I have, however, read The Seville Communion by Arturo Perez-Reverte, in which the city is almost a character.
I am sure there must be novels or stories set in some or all of these other cities as well, certainly Granada.

I did a tagmash on Andalucia, novel and came up with:
The alchemist by Paulo Coelho: this starts out in Andalusia, but travels around the mid-east. I've read this, and liked it, although I haven't quite got into Coelho's other books. I think the original of this novel is in Brazilian Portuguese.
The lions of Al-Rassan by Guy Gavriel Kay is alternate history fantasy of medieval Spain.
Leo Africanus by Amin Maalouf is about a traveler in the middle east in the Middle Ages.

I have not read it, but I hear good things about Radwa Ashur's Granada: A Novel. At amazon.com

Nick Bantock's "The Forgetting Room" is set in Ronda. It's about a man who inherits his grandfather's house and art studio in the town of Ronda. Wrapped up in this home is a mystery that he unravels while exploring Ronda and rediscovering his love for art. Lovely and mysterious illustrations in this book too.
