UPDATE: BOOK FOUND
Alright I remember reading this book in middle school, as I found it on my teacher's bookshelf. I remember what the cover looks like and the synopsis; the cover has a girl and a knight, but the girl is the main character (unlike the other books that have popped up when I searched 'lionheart book'). The book's general plot is that this girl is raised by a knight, and then sets out into the world with her aspiring knight friend. I also remember she met a witch and learned she could become a sorceress?? The book was part of a series but each book focused on a new character, all of them took place in the medieval era. I believe the author was a man but I'm not sure. I don't know it was weird but if someone could help me find it I will be eternally grateful!

Are you sure this is historical fiction and not a fantasy novel?

It almost sounds like a Tamora Pierce book, one of the books was called lioness rampant.
Also covers can change over time because of re-issuing, so don't become too focused on the cover.

Yes, I was thinking of the Song of the Lioness as well, but those are all about Alanna.
